Q: What is wrong with me that makes me a Carbohydrate Addict?

A: We thought that we might try to answer this question by taking you on a little trip in our time machine. We are sorry but we must restrict this trip to those of you who are who are not prone to motion sickness. Those wishing to go, please form a line to the left. Excuse me sir, yes you in the back, please try not to shove. We will have room for all of you. If you are ready, we suggest you go home, pack a little Complementary Lunch with something appropriate to drink and join us back here at the appointed time. The theme on this trip through time is CARBOHYDRATE ADDICTS: RIGHT BODIES IN THE WRONG TIME Hummmmm, Humm, Hummmmmm, Himm, Humm (some time passing) Welcome back to our time machine. Glad to see you all here. Please step in, one at a time, and take seats over there next to the flux capacitor. I will , Oh, watch your head miss, the top of the doorway is quite low. The door to the time machine is quite low but we can go into the reasons for that later. There, now I can shut the door. Uhh, it's a little tricky but I've got it. We are just about ready to begin our trip to the year 300,000 BC. Fasten your seat belts while Rachael makes the necessary settings on the tempero-chronograph and I check the energy charge. If you have any cellular phones or beepers, they are not going to work while in transit or somewhere in the past, so you might as well shut them off to conserve energy. Laptops also don't seem to work in the past either, something to do with the labor contract between bits, bites and TIME, but enough of that. I think that we are ready now, hold on to your hats. Rachael, hit the button. (whirs and swishes as our machine moves through time.)

There, that wasn't bad, we are here already. Excuse me sir, you with the safari hat, are you okay? You look a little pale. Time travel doesn't agree with everyone at first. You'll get used to it once you have experienced it. As soon as you get outside, the feeling will pass. Now where were we? Oh yes, in the year 300,000 BC. You can get out now but do not wander. Once we are outside, we'll tell you what to expect.

Now as you can readily see, we have landed on a hillside so that we can get a good view of everything around us. Stay close to the time machine and don't touch anything or pick up any souvenirs. You can never tell if a bug that you might step on could change the course of history. Try not to make any noise, we don't want anyone to know that we are here.

Oh, we're in luck, look down in the valley. Do you see that band of humans walking through that field. They live in caves and roam the country side looking for food. If we could stay here long enough, we would notice that much of their time is spent in hunting and gathering. Check out the landscape, what do you notice? Right, there are no mini marts, supermarkets, or fast food restaurants anywhere in sight. There is no evidence of an apartment house, a ranch home, satellite dishes, multiplex movie theaters or exercise centers. No where can you see a car, a bus, a truck or even a road.

These people spend much of their time gathering low energy foods, consisting of high fiber roots, stems, and leaves of plants. The meats that they eat are from lean wild animals. They have no access to sodas (regular of diet), "sports drinks", fruit juice drinks, beers or wines. The only thing that they drink is water. Yes, water, the 20th century's long forgotten drink. If we were to watch them throughout the year, we would see that seasonal changes and lack of ways of preserving foods make them encounter both periods of feast and periods of famine. Deep within their bodies, Mother Nature has bestowed upon them a remarkable hormone to help them save during times of those feast so that they may live through times famine. This hormone, INSULIN by name, helps them maintain sugar balance in their blood when they eat carbohydrates, mostly starches from roots and some stems of plants. They rarely if ever encounter sugars. Insulin balance is very important for their survival.

Ohmigosh, look at the time. If we are going to get you all back on time we need to move on. If you get back into the time machine we can move ahead some 300,000 years. Seat belts on please. We'll be off as soon as I get this door closed. Okay Rachael, we're all buckled in. (More sounds of whirs and swishes. Sounds fade.) Well, we are here in the year 100 AD. This machine really works in the blink of an eye. Let's go out and take a look. The first thing to notice is that people are living together in much larger groups, villages, towns and cities. Another thing that strikes the eye is the result of the development of technology through the ages. It's clear that life has become easier. Look at all of those farms in the distance. They produce foods for themselves and all of the people in this city as well. Farming and some preservation of foods has made a big difference in the kinds and types of foods that the people in this time eat. Most of them no longer live in caves and have given up hunting and gathering. The hormone insulin continues to play an important role in their survival but they don't have the feast/famine situation encountered by their ancestors.

There are many open air markets where people can by fresh foods. Some things appear to be dried to keep them for a time but most things are not and must be eaten before they go bad. If we were to go into any of the houses, we would not see refrigerators or closets with canned goods. Meats still come from lean animals and certainly nothing is processed. We could spend more time here but we think that you are beginning to see a picture evolve. Let's get back to the time machine and travel back to our own time. Watch your step as you get in; that ledge can be a little tricky. Sir, you with the safari hat, we're ready to go now so could you please get on board. Okay Rachael, the door is locked and we're buckled in. Let's go. One more time there are sounds of whirs and swishes.) Well that is the end of our trip. Step outside and we'll finish up our tour. Now that we are all outside, look around. What do you see? Yep, your right. In almost any direction that we go there are mini marts, supermarkets, and fast food restaurants; one on every street-corner practically. Life in stress-filled in artificial environments that encourage us to eat very differently from our ancestors. We can walk into any food market, gas station mini mart, or hit a vending machine on street corners and buy soda, juices, sports drinks, or snacks of any description. Our homes have refrigerators and pantries filled with processed, sugar laden foods that are always available; all making it possible for us to live in continual feast. Even meats are processed and often contain different forms of simple sugar. Rarely, if ever, do we choose to drink water. Our lives have become much more sedentary. In fact, the other day we saw a woman get into her car and drive to the mailbox at the end of her driveway, open her window and deposit some pickup mail into the box, and then drive back to the front door of her house.

Watching ourselves in our daily activities, we readily see that we are no longer hunter/gatherers. We have become mere consumers who are in continual feast, eating when we want, what we want and what we want are foods that never existed in nature. The hormone insulin continues to do its job in helping us save during times of feast so that they can survive during times of famine. The problem today is that we are in continual feast; the frequent consumption of carbohydrate rich foods and drinks throws our insulin levels out of balance. For those of us who have inherited our cave-dwelling ancestors' bodies, too much insulin is being released and our bodies are not given enough time to adjust. The result is that many of us are continually hyperinsulinemic (producing more insulin than is necessary).

For many who are continually hyperinsulinemic, our bodies become insulin resistant which makes the situation far worse and so this chronic imbalance begins to have its effects on our bodies. Many of us end up with weight and health problems that are related to excesses of insulin release stimulated by eating those carbohydrate-rich foods all day long. It is this imbalance that leads to an addiction to carbohydrates - that compelling hunger, craving or desire for carbohydrate-rich foods; that escalating, recurring need or drive for starches, snack foods, junk foods or sweets.

Humans are said to be the only animals that eat when they are not hungry, drink when they are not thirsty, and copulate out of season. We now know that excess insulin is responsible for at least the first two. The last, we won't deal with here. For many of us, we still have the bodies of our cave-dwelling ancestors and are suffering the consequences of carbohydrate addiction.

We took you on this little trip to emphasize that our diets have changed radically from the time that our ancestors were living in caves and wandering the lands in search of food. Sadly and no fault of our own, our bodies have not kept pace and we are suffering the consequences of having the "right bodies in the wrong time". THIS DOES NOT MEAN THAT WE ARE GOING TO HAVE TO LIVE LIKE CAVEMENS AND SUFFER THROUGH FAMINES. CAs can live in times of plenty, it is just that we must do everything that we can to keep our insulin levels in balance. Sugars, sugar substitutes, flavor enhancers like MSG, complex carbohydrates like starches all throw our blood insulin levels out of balance. To make matters worse, most of us have a lack of GTF in our diets. The sugary foods that we eat deplete our bodies of precious stores of chromium. To make matters worse, sugary foods contribute to the break down of GTF and result in our bodies excreting precious chromium. Okay, we guess that's the end of our little trip.

Thanks for coming along. We hope that this explains why high fiber, low carbohydrate foods should be the basic mainstay for much of the day if you are a CA and why balanced insulin levels are so important. It also explains why it is important not to play around with the programs or to pick and choose some parts of a program and not others. It's like being given an area code and phone number and deciding not to dial all of the numbers. You just won't get connected.

So if you are a CA, listen to your caveman's body. It will tell you what's right for you. Oh sir, sir, yes you. You left your safari hat inside our time machine.
